## Job Description

COTRA Izakaya | Gowanus, BrooklynCOTRA is a well established Japanese Izakaya in the heart of Gowanus, Brooklyn: a rapidly developing and exciting area with a dynamic blend of both old-Brooklyn and new developments. Operating in one of the oldest restaurant spaces in Brooklyn, COTRA took over the same space that was occupied by the historic Monte's Venetian Room a little over 2 years ago. Serving both sushi as well as hot Japanese classics, we are also beginning to develop a Japanese pizza program to take advantage of the original wood fired oven that came with the space.Currently, we are seeking an experienced, organized, and dedicated Chef de Cuisine to lead all BOH operations and staff as we transition and infuse the pizza program into our current menu.

The ideal candidate will have experience in both sushi execution, general hot line experience, as well as a proven record of effective and developmental leadership.Skills & Qualifications:- Minimum of 2 years in leadership positions in fine dining or upscale-casual environments- Proven success in quality control and staff development / management- Exceptional communication skills and ability to stay calm and perform under pressure- Exceptional organizational skills & ability to manage and set organizational standards- Food Handler's CertificationLeadership Qualities:- Foster a professional environment of accountability and collaboration- Lead by example both behind the line as well as from the office- A contagious and genuine passion for culinary and operational excellenceResponsibilities:- BOH staff management including hiring and disciplinary actions- Quality control- Lead service - Food ordering and inventory- Assurance of strict adherence to all BOH food safety and DOH standards- Maintain highest standard or organization and cleanlinessThis position will be collaborative with our established General Manager, as well as directly with ownership, which includes our Executive Chef. We are a small but growing company and are ultimately looking for someone to grow with us and take ownership of the role.
