Job Description
Saboteur is a new restaurant opening late summer 2026 in Los Angeles. Led by Chef Deb Keetch, Saboteur is inspired by the bistros of Europe translated through a distinctly Californian lens. We’re building something with a strong point of view, and we’re looking for an Assistant General Manager who wants to help bring that world to life.
This is a role for someone who leads with hospitality, thrives in the details, and wants to be part of building something from the ground up — someone with real investment in the experience, the team, and the culture we’re creating together.
What You'll Be Doing
- Work alongside the GM to oversee all daily front-of-house operations
- Help develop and execute the style of service; implement and maintain service standards and protocols
- Assist the GM in recruiting and developing a team focused around our guiding principles — establishing the behaviors, habits, and culture that will define the Saboteur experience from day one. Central to that is fostering a genuine sense of community, both within the staff and with our guests, creating an environment where people feel connected to the place and to each other
- Oversee FOH employee training materials and orientations
- Assist in creating menus and signage for all aspects of the restaurant
- Take a proactive approach to facility maintenance and lead the way when solving problems
- Oversee FOH scheduling and labor
- Understand and manage restaurant costs, including receiving product, entering invoices, and overseeing inventories
What We're Looking For
- Genuine passion for hospitality and the broader world of food and beverage — an interest in wine is a plus
- Strong leadership skills with the ability to manage and inspire a team
- A solutions-oriented mindset — someone who approaches challenges with composure and resourcefulness
- A creative sensibility with an eye for atmosphere, storytelling, and the full arc of the guest experience
- Someone who is energized by the process of building something — not just operating it
- A desire to grow with the company
Qualifications
- 1+ year of restaurant management experience
- Technical proficiency in restaurant POS and reservation systems
- Strong written and verbal communication skills
- Available to work nights, weekends, holidays, and extended shifts as needed
- Exceptional food and beverage knowledge
- ServSafe Manager certification required within 90 days of hire

Compensation
$70,000–$80,000 DOE

PHYSICAL DEMANDS
The physical demands for this position include seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds, sitting or standing for 4 to 8 hours, bending, and moving intermittently during working hours.
