Position SummaryEntrepreneur Resorts Pvt Ltd is looking for an experienced and dynamic Food & Beverage (F&B) Manager to oversee all aspects of our F&B operations, with a primary focus on successfully launching a new restaurant concept in Bali.
This role requires a proven track record in pre-opening planning, operational execution, staff management, and aggressive marketing strategies tailored for the competitive Bali market. The ideal candidate will be a visionary leader with a deep understanding of tropical resort/destination dining trends and an unwavering commitment to exceptional guest experiences and profitability.
Key Responsibilities
- New Restaurant Launch & Pre-OpeningConcept Execution: Work closely with stakeholders and the culinary team to finalize the restaurant concept, menu, and service style, ensuring alignment with the target demographic in Bali.Operational Setup: Develop comprehensive pre-opening checklists, standard operating procedures (SOPs), and service manuals. Oversee the setup of the physical space, including kitchen layout, bar design, POS systems, and inventory management infrastructure.Licensing & Compliance: Ensure all necessary licenses, permits, and regulatory compliance (local and national) are secured prior to launch.Supplier Relations: Source and negotiate contracts with local and international F&B suppliers, focusing on quality, sustainability, and cost efficiency relevant to the Bali market.Budgeting: Develop detailed pre-opening and first-year operational budgets, including revenue projections, cost of goods sold (COGS), labor costs, and capital expenditures.
- Marketing and Branding (Bali-Specific)Market Strategy: Create and implement a robust F&B marketing strategy designed to achieve high visibility and rapid adoption in the Bali dining scene.Digital Presence: Oversee the restaurant's social media strategy, including content creation, influencer collaborations, and online reputation management (e.g., TripAdvisor, Google Reviews).Promotions & Events: Plan and execute launch events, ongoing theme nights, and collaborative promotions with local resorts and businesses. Public Relations: Serve as the primary media contact for the F&B outlet.Menu Engineering: Regularly analyse sales data to refine menu pricing and offerings, ensuring maximum profitability and alignment with customer preferences.
- F&B Operations ManagementDaily Oversight: Manage all front-of-house (FOH) and back-of-house (BOH) F&B operations, ensuring the highest standards of quality, service, and hygiene.Guest Experience: Implement service recovery protocols and conduct regular guest feedback analysis to continuously elevate the dining experience.Inventory & Cost Control: Rigorously monitor inventory levels, minimise waste, and manage COGS to meet budgeted targets.Maintenance: Coordinate with the facilities team to ensure all F&B equipment and physical spaces are maintained in excellent condition.
- Team Leadership and DevelopmentTraining: Develop and execute comprehensive training programs covering product knowledge, service standards, and local cultural sensitivity. Performance Management: Conduct performance reviews, manage disciplinary actions, and foster a positive, high-energy work environment.Scheduling: Create efficient staff schedules that adhere to labor budgets while ensuring adequate coverage during peak hours.
QualificationsExperience: Minimum of 5 - 7 years of F&B management experience, with at least 2 years in a management role focused on new restaurant openings or large-scale F&B projects.Location Expertise: Demonstrated experience and knowledge of the Bali tourism and hospitality market is highly preferred.Skills: Exceptional financial acumen, advanced knowledge of POS and inventory management systems, and strong proficiency in F&B marketing and sales.Education: Bachelor's degree in Hospitality Management, Business Administration, or a related field is preferred.Communication: Fluent in English; proficiency in Bahasa Indonesia is a significant advantage.
