Bar Prep Specialist | Gage & Tollner / Sunken Harbor Club
Gage & Tollner and Sunken Harbor Club are looking for a full-time Bar Prep Specialist to join our team.
Full availability Friday through Sunday is required for this position. This is a five-day-a-week role, with a consistent schedule that will generally include two consecutive days off. Full-time at Gage & Tollner is a minimum of 30 hours per week, though depending on business and production needs, some weeks may be closer to 40 hours.
These are primarily daytime shifts, and there may be some flexibility around start times for the right candidate.
This is a great role for someone who likes the precision and creativity of culinary production but wants to work in the world of cocktails. Maybe you’re a pastry cook interested in learning new techniques and working with different ingredients and equipment. Maybe you already have bar prep experience and want to work with one of the country’s most creative cocktail programs.
Either way, we’re looking for someone organized, curious, consistent, and excited to learn.
Gage & Tollner was nominated for the 2026 Tales of the Cocktail Spirited Award for Best U.S. Restaurant Bar, East, and Sunken Harbor Club is known for its innovative approach to tropical cocktails. The beverage program is led by Garret Richard, co-author of Tropical Standard: Cocktail Techniques and Reinvented Recipes.
What You’ll Do
Our Bar Prep team supports the bars at both Gage & Tollner and Sunken Harbor Club by producing the ingredients that make our cocktail programs possible.
Responsibilities include:
- Preparing juices, syrups, blends, garnishes, tinctures, infusions, clarifications, and other specialty cocktail ingredients
- Following recipes carefully and producing consistent results from batch to batch
- Taking inventory, reviewing par sheets, and organizing your prep list and workflow
- Working with a wide variety of culinary techniques, ingredients, and specialty equipment
- Maintaining established recipes, prep procedures, quality standards, and sanitation practices
- Setting up and breaking down the bar prep workspace
- Restocking and organizing the prep area for the following shift
- Properly labeling, dating, storing, and rotating ingredients
- Maintaining a clean, organized, and safe workspace throughout the shift
- Participating in scheduled meetings, training, and ongoing education
- Following all company policies and applicable health and safety regulations
What We’re Looking For
- You should be someone who enjoys detailed, hands-on production work and takes pride in consistency and organization.
- Ideal candidates have:
- Full and consistent availability Friday, Saturday, and Sunday
- Availability to work a five-day schedule
- Strong organizational skills and attention to detail
- The ability to carefully follow written recipes and production procedures
- Good communication skills
- An understanding of basic food safety, sanitation, and Department of Health standards
- The ability to work independently and manage a prep list efficiently
- Culinary production experience, especially pastry experience, is a plus
- Previous bar prep or beverage production experience is a plus, but not required
- Experience with specialized equipment such as culinary centrifuges, N2O chargers, carbonation systems, or similar tools is great, but not necessary. We’re happy to train the right person.
- Schedule
- Full-time, five days per week
- Minimum of 30 hours per week, with some weeks closer to 40 hours
- Primarily daytime shifts
- Some flexibility with start times may be available for the right candidate
- Generally two consecutive days off each week
- Full Friday, Saturday, and Sunday availability is required
Physical Requirements
- This is an active, hands-on position. Team members must be able to:
- Lift and carry up to 50 pounds
- Stand and work on their feet for extended periods
- Frequently walk, reach, bend, crouch, and kneel
- Use stairs while carrying ingredients, equipment, or supplies
- Safely perform repetitive prep and production tasks
