Job Description
Calabash is an all-day bakery and brasserie founded by Chef Camari Mick, rooted in the intersections of the Black Atlantic Diaspora. Named for the calabash gourd, a vessel found throughout Africa and its diaspora, the restaurant draws inspiration from a symbol of nourishment, hospitality, craftsmanship, and shared community. Calabash explores the connections between West Africa, the Caribbean, and the Americas, celebrating the movement of people, ingredients, and culinary traditions across generations.
Grounded in Camari's formal culinary training, the menu reimagines diasporic foodways through a contemporary bakery and brasserie. Naturally leavened breads, laminated pastries, and seasonal dishes reflect the breadth of the African Diaspora while embracing local ingredients and thoughtful technique.
Chef de Cuisine Tajeh Porter brings her ingredient-driven approach and collaborative leadership to a culinary program shaped by research, craftsmanship, and a deep respect for the cultures that continue to influence one another through food. From morning coffee and fresh pastries to lunch, dinner, and natural wine, Calabash offers a warm, neighborhood gathering place where exceptional hospitality and thoughtful cooking create a new expression of diasporic cuisine.
Core Responsibilities;
- Prepare all dishes according to the Calabash Recipe Book, meeting quality, consistency, and timing standards.
- Set up, break down, and maintain a clean, organized, and safe workstation throughout service, meeting all food handling and hygiene standards.
- Follow allergy protocols and modify dishes as directed by chefs, using comprehensive knowledge of recipes, ingredients, and presentation standards.
- Label, stock, and organize inventory.
- Communicate clearly during service, using proper callback terminology and keeping dialogue relevant to kitchen flow.
- Report to and follow instructions from the Executive Chef, Pastry Chef, and other management.
- Maintain a professional demeanor and appearance, arrive on time for scheduled shifts, and bring a genuine desire to learn and grow.
- Candidates must be self-sufficient with the ability to work well in tight spaces independently, and apart of a team.
